Starch is widely used in the food and non-food industries, this related to its physicochemical characteristics. In coming years, climate changes will become unpredictable, these conditions may affect process of starch biosynthesis polymer properties. The sweet potato market has grown substantially recent years understanding environmental impacts on characteristics contribute advances for sector. Herein, effects growing season structural, morphological, properties starches were evaluated. Sweet trials with two Brazilian cultivars (Canadense Uruguaiana) installed dry (planting March harvesting July) rainy October March). Regardless cultivar, isolated from plants have a more ordered structure, higher gelatinization temperatures, thermal stability, resistant content. Starches percentage small granules lower crystallinity temperatures. These findings can be useful as early knowledge help supply chain better plan target suitable markets naturally modified starches.
